A dessert but more of snack. I recently learned how to make these “inside out ukadiche modak” and love them so much. Try them out.

Ingredients:

-1 cup rice flour

-1 cup fresh coconut

-1 cup boiling water

-salt to taste

-1/4 tsp freshly ground cardamom

-1/2 cup jaggery (powdered)

How to make it:

  1. Once the water boils add 1 tsp ghee and 1/4 tsp salt
  2. Switch off the stove and gradually add in the rice flour
  3. Knead the dough for a good 5 minutes and rest it aside.
  4. In a pan add in the coconut and the jaggery, let it turn into a homogenous mixture.
  5. The rested dough is now turn into little balls and panfried in ghee.
  6. Add the panfried dough balls to the coconut-jaggery mixture.
  7. Switch off the stove and garnish with cardamom powder.
  8. Enjoy with chai, as a dessert or as a mid-day pick me up.
